Making spirits, whiskey in particular, takes knowledge and the ability to plan years ahead. Because once that first batch of spirits comes off a still, it goes straight to a barrel where it will sit…and sit…and sit. The longer it ages, the more nuanced the flavor profile. Gratification comes when the distiller—or fortunate imbiber—pours a dram of this barrel-aged whiskey, swirls the rich amber liquid, inhales the spicy-sweet fragrance, and then tastes.
