Servings 6 servings
Ingredients
- 2 cups maple syrup
- 1 cup cream
- 3 tablespoons unsalted butter, chilled
Instructions
- Line a 9×5-inch pan with parchment paper and set aside. Place the maple syrup in a small saucepan over medium heat and bring to a boil. Once boiling, add the cream. Continue to boil, stirring occasionally until the mixture reaches 236°F. This will take about 20 minutes.
- Cut the chilled butter into ½-inch cubes.
- Once the mixture reaches 236°F, remove from the heat and whisk in the butter. Continue whisking vigorously as the mixture cools for about 6½ minutes, until the fudge begins to thicken.
- After the fudge thickens, pour it into the prepared pan. Allow to cool completely before cutting.
