Creamed Spinach

Creamed Spinach

Creamed spinach provides the perfect side to a perfectly cooked steak entrée.
Course Side Dish
Servings 4 (with some left over)

Ingredients
  

  • 1 tablespoon minced garlic
  • 1 tablespoon diced shallots
  • 1 tablespoon salted butter
  • 1 (48-ounce) package frozen spinach
  • 1 quart plus 1 cup heavy cream
  • ¼ teaspoon white pepper
  • ½ teaspoon salt (or to taste)
  • Pinch of nutmeg
  • 1 2/3 cup Parmesan cheese

Instructions
 

  • Sauté the garlic and shallots in butter until soft and aromatic. Add the spinach and cook until soft. Drain excess liquid. Add the heavy cream, pepper, salt, and nutmeg. Cook until the cream has thickened. Add the Parmesan.
  • You can serve right from the sauté pan or pour into a baking dish, top with more Parmesan, and bake at 350°F for approximately 20 minutes, until the cheese is browned and the dish is bubbly.
